My Grammy's Chocolate Pie

I have so many great and bittersweet memories of my grandmother aka Grammy like the chocolate pies she would make us (one of my favorite memories), beautiful quilts full of detail, and unconditional love. I remember every time that we would visit my Grammy, she would make my brother and me a chocolate pie. Even when she would visit us, she would make us a chocolate pie. It was one of the most magical things to my brother and me when we were kids. She would always make us wait to eat it until it cooled, which just built anticipation and hunger to enjoy the pie even more. When we finally were served our piece we would dig in and have it devoured in less than 30 seconds (which I find pretty impressive)! Now my mother and I make chocolate pies together and it is one of the best parts of my life because I can remember my Grammy and spend time with my mother. I hope y'all enjoy my Grammy's Chocolate Pie!

Ingredients:
2 tablespoons butter
2 tablespoons cocoa
2 eggs (separate egg yolks and egg whites)
2 tablespoons flour
1 cup milk
1 baked pie shell
1 cup sugar
6 teaspoons sugar (meringue)
1 teaspoon vanilla

Directions:
Step 1 - Melt the butter in your cast iron skillet on low heat.
Step 2 - Mix cocoa, flour, and sugar together
Step 3 - Add to butter.

 Step 4 - Mix egg yolks and milk together and then add to chocolate mixture.
Step 5 - Mix until consistently thick, then add the vanilla.
Step 6 - Pour in the baked pie shell.
 Step 7 - Using a mixer, beat the sugar and egg whites gradually together while increasing mixer speed until stiff peaks form. (Meringue - approximately 3 min.)
Step 8 - Pour meringue on pie and cook in the oven on 325 degrees for 8-10 minutes or until meringue is lightly brown.

  2. Grammy would be proud of you for many things, but she would've treasured that she left you with so many sweet memories. Thanks for honoring her in this way. I enjoy every minute of the things you and I get to do together:) I am thankful God picked me to be your Mother. Love you!
